Full on Sweet Potatoes!

One way to enjoy eating is to discover other ways of preparing or cooking your favorite foods. I love herbs and I love Sweet Potatoes. I came to an idea of baking sweet potatoes with rosemary and thyme and EVOO plus a dash of sea salt. I called it "Herbed Sweet Potatoes". It tasted sooooo delicious that I get to experiment more on baking combinations of different vegetables! This my favorite now and the most important is, my stomach is full! Go on, try it!

Back to the Gym!

I've been pretty busy for the past few months. I admit I am a little lazy to get back on track. :( I often thought of being so tired and I just need some rest.

Thanks to my hubby who have been very supportive. He never failed to remind me that going back to the gym will make me feel good. So, I did! I went to the gym for some aero-taebo sessions which lasted 1.5 hrs every other day. I did great! I realized that the energy I felt after having the 3 sessions was the energy I needed few months ago when I am really stressed taking care of my family and home. Whoa! It really feels great! Somehow, I paid few hours for myself for a good reason.

All I need is to focus again.... I know, it will take 30 days to make a habbit and I am willing to try. :)

  Snack half cup quaker oats cereal w/o milk

I'm Back!

I missed belletoday!

I'll be back on blogging my diet experiences, food and recipes, etc. I have been busy for many months. My husband and I decided that I take charge of my home and family. So, I decided to quit my job. Now, I stay home for my family.

Feeling Great with a Healthier Body

I must admit! I really feel great!

In the last two years of my life, I spent a lot of money buying medicines for all of my illnesses.  Allergic rhinitis, migraine attacks, sinusitis, high blood, UTI , constipation and asthma...these are the illnesses that bothers me for the longest time not until I decided to make a difference for myself not for any reason and not for anybody but because I realized how I abused my body with all the harmful foods I chose to feed my stomach which resulted to those illnesses I mentioned earlier. Now, I felt that there are a lot of improvements happening in my body. My high blood pressure 130/90 (which is my normal BP before but considered boundary) went down to 110/80. I have no asthma attacks so far as well as my allergy which usually takes place in the morning as soon as I woke up (around 20 sneezes), bowel movement is now ok and no migraine at all. I consider these signs that I am becoming healthier and I am very happy about it.

Let us admit to ourselves that we know all the healthy foods we should eat but failed to eat them because of so many reasons. And one of those reasons is that we lack time to prepare our meals and often times, we prefer to buy prepared foods not recognizing the manner of how they are actually prepared and cooked.

In the last two months, I managed to transform my family's eating habits by preparing healthy meals for them. I also prepare healthy snacks for my kids. It was a challenge for me at first because my kids used to love fried chicken and chicken nuggets! I was able to feed them fruits and vegetables in one week and another week and so on. Now, I am proud that they are eating healthier meals.

Here is one of those dishes that has been their favorite :

KANGKONG, MUSHROOMS and TOFU in Osyter Sauce w/ Vermicelli Noodles. This is very simple and economical. Who says dieting will cost you too much??? The ingredients are cheap and available in the market plus it really tastes good!!! :)

  Breakfast 8oz vegetable juice
  Lunch bowl of green salad and 1 banana
  Snack fruit smoothie
  Dinner lettuce and baby carrots with ceasar dressing, 1 glass of carrot juice

My Own Version of Ensalada

Looks like I am doing a great job preparing my own version of Ensalada. My husband really liked it as he ate it as side dish with dried fish my mom gave us when she went to Cebu. I can’t remember the name of the dried fish but the ensalada can be eaten with any type of fish cooked in any way. I must agree that it was tempting to eat rice but still I remained disciplined as I ate only my Ensalada with the fish. The ensalada which includes lettuce, sliced tomatoes and salted egg with vinegar mixture (vinegar, sugar, pepper, water) was truly satisfying after all. You have to try it!

  Breakfast oatmeal with Milo :)
  Lunch ensalada and fish
  Snack 8oz carrot juice
  Dinner green salad
  Glasses of water 12
